The plant grows from thick underground rhizomes similar in appearance to ginger and turmeric. These rhizomes are aromatic and may have a pale interior, which helps explain the common name white turmeric.

Zedoary's flavor is generally more bitter and camphor-like than ordinary culinary turmeric.
